Easy to do at home and easy recipe to create in the truck.  I used my Kitchens Aid Multi Cooker but you could use any thing that you like to use in the truck that will cook eggs. Scrambled Eggs are easy to make and can be made to any preference.  In this example I had some heavy whipping cream that needed to be used up so I mixed that in with my egg mixture before cooking.  Scrambled eggs can be done with just eggs or add milk or cream.

I find it easier and that it takes up less space to cook a dozen eggs at a time and then place the equivalent of two eggs in a Baggie to be heated up later. The variety of toppings is endless and if we think of the scrambled eggs as an omelet we realize what can be added is endless. I used what I had in the truck at this time but add and experiment as you would like.

Eggs are the only mandatory ingredient!

What I used in this instance

1 dozen eggs

1 cup whipping cream

1 small can of green chiles

couple slices of cheddar cheese and swiss cheese

Baggies or container
